Wizard magic is a sort of academic thing, involving everything from memorization to potion-making to studying the theory behind how and why magic works (something only really advanced wizards ever get into, but still very much a part of wizard magic).  Witch magic is much more wild and nature-related, since it deals with currents of magic and doesn't care about hows or whys, just that things work.  Witch magic also revolves around familiars, which have nothing to do with wizard magic.
