The reason I haven't done much with witches in the story yet is fairly simple: Aylia's not studying to be one, nor is anyone else who's a main character, and not enough of the story takes place in Aylia's world to justify introducing a character who is yet.  Different types of magic are more common in different parts of the world, you see, and wizard magic is the most common type in Umbria.  Besides, witch magic doesn't involve official schooling, not like wizard magic does.
