The tradition of dedicating a banquet to somebody else isn't a necessary one, or one that's always followed, but it is considered a nice touch to have the guest of honor at a formal banquet stand up and give a speech dedicating the banquet to someone else. Duchess Letitia would love this idea because it gives her daughter a chance to be as sweet and noble as she's sure her younger daughter is (even though she's dead wrong). And Alassa would, of course, hate the idea because she's incredibly selfish.
